I love breakfast food but sometimes it's just too heavy and too much for me in the mornings. Honestly, I'm not much of a breakfast person, I'm more of a breakfast at 10:30 person. But when I am in a rush in the morning and need to run out the door quickly, I know I will be hungry soon, I love when I can grab some of my overnight oats! They are so easy to make and delicious! I have been making overnight oats for so long, I like to try new recipes or add new things to switch it up a bit all the time. So I have come up with my two favorite recipes for overnight oats, and a basic recipe that you can manipulate to make whatever you want! Overnight oats actually have so many health benefits! They have beta-glucan, a soluble fiber that has been shown to lower blood cholesterol levels, they are also known to build your immune system, and enhance brain function. Also, because we are using raw oats they store all their original nutrients, and when you add more healthy ingredients like chia seeds you can get even more fiber and protein; they can only get better!

Most recipes will say that the overnight oats will last you 2 days in the fridge, but honestly, I've left mine 3 or 4 days even sometimes and they're still good. I don't know how good it'll taste after that though. :) Prep time is always around 5 minutes, then let them sit in the fridge overnight or for 6 hours.

Peanut Butter Overnight Oats
1/2 cup of your milk of choice
1/2 cup of oats
2 tablespoons of peanut butter ( or your choice of nut butter)
2 teaspoons of maple syrup
Optional: sprinkle some cinnamon on top and some sliced banana.

Strawberry Coconut Overnight Oats
1/2 cup of your milk of choice
1/2 cup of oats
1 tablespoon of coconut flakes
1 teaspoon of vanilla extract
4-8 strawberries chopped and mixed in, with extra for topping
Optional: mix in 2 teaspoons of chia seeds

Overnight Oats Base
1/2 cup of your milk of choice
1/2 cup of oats
1 tablespoon maple syrup or vanilla extract
1 tablespoon of chia seeds
Optional: add anything else you would like to this mix! You can do cinnamon, chocolate chips, berries, or whatever you feel like!
